Broiled Bison Steak

Bison steak

I created this to use only indigenous ingredients.

Note: Due to the leanness of bison, well-done bison steaks are not recommended, as the meat has a tendency to become dry when overcooked.


1 part fresh pineapple juice
1 part maize or sunflower oil
1/24 part maple syrup (or try juice from Saskatoon berries)
Bison steak


1. Marinate steak for a 1/2 hour on each side.

2. Cook steak on outdoor grill. Total cooking time will depend on the thickness of the steaks: 1" thick — rare: 6-8 min, medium: 10-12 min; 1 1/2" thick — rare: 10-12 min, medium: 14-18 min; 2" thick — rare: 14-20 min, medium: 20-25 min.
