Potato filling

Potato Filling is a Pennsylvania Dutch recipe always made for Thanksgiving and Christmas. It’s great with gravy.

Ingredients

1 stick of butter
1 small onion, diced
3 celery stalks, diced
3 slices of stale white bread, cubed
Mashed potatoes (your recipe)
2 eggs

Directions

1. Preheat oven to 350.

2. Melt butter in cast iron frying pan. Sauté onions and celery until soft. Add bread cubes and sauté.

3. Add two eggs to the mashed potatoes. Add mashed potato/egg mixture to pan.

4. Put pats of butter on top. Bake for 30 to 40 minutes at 350. I like the top to be crisp.
