Carrot Cake with 'Lyla in the Loop'

Carrot Cake

Ingredients

Non-stick cooking spray or a stick of butter for greasing
1 1/2 cups granulated sugar
1 cup vegetable oil
3 eggs
2 cups flour
2 teaspoons ground cinnamon
1 teaspoon vanilla
1/2 teaspoon salt
3 cups shredded carrots (from about 5 medium carrots)
1 cup crushed pineapples, drained
Can of cream cheese icing

Directions

1. Preheat the oven to 350 F. Spray a 13x9 cake pan with non-stick spray or grease with a stick of butter.

2. In a large mixing bowl, beat granulated sugar, oil, and eggs with a spatula or electric mixer on low speed for about 30 seconds or until blended. Add flour, cinnamon, baking soda, vanilla, and salt. Beat on low speed for one more minute. Mix in carrots and pineapples.

3. Pour the batter into the greased pan. Bake for 45 to 55 minutes, until cake is brown and a toothpick inserted into the cake comes out clean.

4. Remove cake from pan and let cool on cooling rack for about one hour. Once cool, apply icing.
